Here is a recipe for a traditional dish very popular
in Vietnam around the holidays.


Vietnamese Braised Pork with Eggs

Ingredients:
2 pounds pork belly or pork shoulder
4 hardboiled eggs, peeled
4 cloves garlic, smashed
3 tablespoons sugar
4 tablespoons fish sauce
1 tablespoon thick soy sauce
1/2 teaspoon black pepper
3 cups coconut soda
2 green onions, cut 2 inches long

Directions:
Use a deep skillet or a pot big enough to accommodate all the ingredients for braising. Drizzle enough oil (3 tbsp.), add in garlic, then turn heat on medium. Wait until the garlic turns light brown; then add the pork and fry until golden brown. Add in fish sauce, sugar, and thick soy sauce, and sauté until sauce thickens. Add in coconut soda, eggs, green onion. Sprinkle on black pepper and let simmer for about a half hour until meat is tender.

This is a "sharing dish" on the dinner table around holidays, served with steamed rice and vegetables.
